Crispy romaine, fresh cilantro, shredded cabbage, shredded carrots, crispy radish, diced tomatoes, diced red onion and crispy tortilla strips. Served with homemade cilantro ranch dressing.

 Mexican 3 Layer Dip Cups

Refried beans, avocado mousse and sour cream layered in 5oz. tumblers and topped with cheese. Served with individual bags of homemade tortilla chips.

 Chicken Enchiladas

Handrolled shredded chicken enchiladas smothered with our handmade verde salsa, pepper jack and cheddar cheese.

 Shrimp & Chorizo Empanadas

Served with a sour cream, lime and cilantro sauce

 Cilantro Rice

 Taco Stuffed Tomatoes

Seasoned ground beef, red onion and cilantro stuffed tomatoes topped with cotija cheese blend.

 Caipirinha Tartlets

Brown sugar tartlet shell filled with a cachacha key lime filling.

El Cortez Buffet Reception will be set up buffet style.

All Buffets include: Basic Buffet Setup w/ Tables & Linen, Chafing Dishes & Serving Utensils, Premium Disposable Plates, Utensils & Napkins

Additional 20% will be added for Delivery and setup. Sales tax will be added.

Please keep in mind:

* Room rental is required for any of the banquet options, whether you bring your own food or have us provide the catered meal.

* Alcohol can only be provided by our licensed alcohol caterer, you will not be able to provide your own.

* You will be able to bring your own non-alcoholic beverages.
